Sometimes a great recipe happens when compatible ingredients are merged. Recently, when I brought home a few persimmons, chèvre (soft goat cheese), and large basil leaves, I discovered the sublime compatibility of these ingredients. Bringing these flavors together with a drizzle of Litehouse Foods’ Huckleberry Vinaigrette, I created a Persimmon and Goat Cheese Caprese Salad.
There’s a small window for buying persimmons, and it’s now. Select persimmons that are very soft, because firm persimmons will have a mouth-puckering astringent taste. The sweetness of the American Persimmon (Diospyros virginiana) and the tartness of chèvre are wonderfully compatible.
