Do you have a picnic planned this summer? Picnic salads with sustainable seafood are a tasty and healthy way to add high-quality protein into the picnic basket. Sustainable seafood is becoming more available in supermarkets and at warehouse clubs like Costco. Just last week I found beautiful wild Coho Salmon fillets from Alaska (all seafood from Alaska is sustainable) at my local Costco. Salmon is an ideal type of fish for picnic salads. It has a rich taste and its pink or red color helps to make a colorful presentation with fresh, crispy vegetables and fruit.
Picnic Salads with Alaska Salmon
My Alaska Smoked Salmon Celery and Apple Salad (pictured above) is delightful as a picnic salad. Tart green apple paired with flaked, smoky salmon and snappy celery erupts with flavor with every bite. It’s an elegant salad for the picnic basket.
Do you have leftover salmon from dinner? Pack an impromptu picnic salad lunch with Alaska Coho Salmon Salad. This salad is easy to throw together with grilled or roasted coho salmon, a spring mix of lettuce and herbs, cherry tomatoes, cucumbers, and red onions.
Shrimp salad is a popular picnic menu item, and you’ll love my Shrimp Ceviche and Avocado Sliders. The shrimp is brightened with lime juice and includes awesome textures such as crispy red tango lettuce, creamy avocado, tender shrimp. Keep it sustainable by choosing Pacific white or West Coast shrimp, wild spot prawns from Canada, or farmed Malaysian prawns. To locate sustainable seafood, download the Seafood Watch App and MSC’s Sustainable Seafood Product Finder App. These apps will help you find sustainable seafood virtually anywhere.
Use the same food safety guidelines for keeping your picnic salads cold and fresh as you would with any other perishable foods. The FDA advises us to keep perishable foods at or below 40°F. Also, pack your picnic salads and other perishable foods in a cooler separate from the beverages. Avoid opening the cooler containing the perishable seafood too frequently. Enjoy your summer of grilling and outdoor meals, and remember to pack picnic salads with sustainable seafood.
