Seafood soups and stews stash succulent shellfish and other seafood in savory broth. (Boy, do I LOVE alliteration!) And while it may be steamy outside now, cool weather will turn up soon enough and so will a longing for warming soups and stews. So, here are some ideas for seafood soups and stews to enjoy now and in a few weeks when fall arrives. (Click on the pictures to see the recipes.)
Seafood Soups and Stews: Gumbo
Among seafood soups and stews, gumbo is the queen. As a Gulf-Coast girl originally, making gumbo is second nature to me, but I understand that it can be a bit daunting for some. I participated in a video series a while back showing the steps of making seafood gumbo.
Here’s the first video in the series, which shows me making the gumbo roux. The second through fourth videos in the series shows the whole gumbo-making process on You Tube. (Search for “gumbo Mivesta cookalong” to bring up all four videos. The videos aren’t perfect, but you’ll get the gist of making gumbo.)
Seafood Soups and Stews: Fish
Shellfish is a popular ingredient in seafood soups and stews, but fish is a wonderful addition to soup. My favorite use for fish in soup and stew recipes is to buy less of a pricey cut of fish, like halibut, and get the flavor and texture of the fish without putting a dent in the budget. Other whitefish, such as cod and haddock, are great additions to seafood soups and stews. The mild flavor of these fish allow the flavors of other ingredients to delight the taste buds without a dominating “fishy” taste.
Of course, I cannot forget to mention oysters and clams, which are at their best in seafood soups and stews. I am still testing a recipe for a lactose-free clam chowder!
