I can make vegetarian cornbread stuffing anytime, but somehow, making it for a food holiday inspires me.  Family and friends remember the dish from previous holidays. Plus, my family and guests expect the stuffing to be as good as they have always known it to be. I enjoy the compliments, of course. This Vegetarian Cornbread Stuffing recipe includes meat-free chicken seasoning and smoky liquid flavoring, which bumps up the flavor.

Ingredients
  • Whole-Grain Instant Cornbread Mix
  • 1 large organic bell pepper, finely chopped
  • 2 stalks organic celery, finely chopped
  • 4 stalks green onion, finely chopped
  • 3 tablespoons grilled chicken seasoning
  • 3 fresh sage leaves, chopped
  • 1½ 32-ounce package vegetable broth
Instructions
  1. Prepare cornbread first according to package directions.
  2. Pre-heat oven to 400 degrees. With a fork, break cornbread into small chunks or for a finer texture, cut cornbread into squares and place each square in food processor.
  3. Add broth to smashed cornbread. Add vegetables and seasonings and mix thoroughly. Spray a clean baking dish with non-stick vegetable spray and pour in stuffing ingredients.
  4. Bake for one hour; remove Vegetarian Cornbread Stuffing from oven and allow dish to sit for 10 minutes before serving (stuffing will settle during this time).
